Hoy os traigo estos deliciosos cupcakes con sabor andaluz, habra algo más andaluz que el aceite de oliva y el limón... pues estos están elaborados con estos ingredientes.
Para 12 cupcakes :
100 gr de harina
100 gr de azúcar
2 huevos
1 cucharada de levadura
1 cucharada de ralladura de limón
1 cucharada de zumo de limón
80 ml de aceite de oliva suave
75 gr de yoghourt natural
una pizca de sal
Preparación:
Precalentamos el horno a 180ºC
En un bowl mezclamos la harina, la levadura, el azúcar, la sal y mezclamos.
En otro mezclamos los huevos batidos, el aceite, el yoghourt, el zumo de limón y la ralladura de limón.
Hacer un volcan en los ingredientes secos y añadir los ingredientes liquidos, mezclar hasta obtener una masa suave.
Llenar los moldes y hornear de 20 a 25 minutos.
Para el Frosting :
200 gr de mantequilla sin sal a temperatura ambiente.
200 gr de azúcar glass
1 tarrina de queso crema tipo Philadelphia
1 cucharadita de extracto de vainilla.
colorante.
Batimos el queso con la mantequilla durante uno o dos minutos y vamos añadiendo poco a poco el azúcar glas.
Separamos esta mezcla en tantas partes como colores queramos poner.
Añadimos el colorante.
Decoramos con la manga pastelera.
Para el Topping unas bolitas de colores o " anisitos " como los llamamos en Andalucía.
Estaban muy espojosos y suaves !!!
